Thanksgiving has come and gone; leaving you with a food coma and more leftover turkey than one knows what to do with. Now you could just keep the gluttony alive and add bacon to just about anything. But you’re a Son of Strength. Fight your food cravings and get your diet back on track through this recreation of your Thanksgiving remnants or even a rotisserie chicken. We present to you…

 

The Turkey Cashew Salad

The Goods:

  • Leftover turkey or chicken (pulled apart)
  • 1/2 cup of Cashews
  • 3 Celery
  • 2 Scallions
  • 1/4 cup of Cilantro
  • 2 table spoons Almond Butter
  • 2 tablespoons Tamari or Soy Sauce

Note: This recipe is based on 16 ounces of turkey. If you have more or less turkey, just adjust the almond butter-tamari sauce; keeping in a one to one ratio.

 

The Prep:

  1. With your hands, shred the leftover turkey into bite size pieces. Place into a medium to large bowl.
  2. Chop the cashews, celery, scallions, and cilantro. Add to the bowl of turkey.
  3. In a separate small bowl, add the almond butter and tamari. Stir these two ingredients together until a smooth texture is created.
  4. Add the almond butter-tamari sauce to the large bowl. Mix and stir all the ingredients together.
  5. Refrigerate and enjoy!
